Magic Weight Loss Roasted Cherry Tomato Soup

Serves 3

500g cherry tomatoes on the vine
1 tbsp olive oil
1 tsp grated lemon zest
Sea salt
500g vegetable stock
1 tbsp tomato paste
1/2 tbsp capers, chopped
1 spring onion, finely sliced 
Preheat the oven to 230°C/450°F/gas 8.

 

METHOD

  1. Place the tomatoes in one layer on a baking sheet. Drizzle 1 tablespoon olive oil onto the tomatoes and the same of balsamic vinegar, some lemon zest and a little sea salt. Roast for about 20 minutes until the tomatoes are bursting and very soft.
  2. Remove the tomatoes from the vines and add to a blender with hot stock and tomato paste. Blend until smooth.
  3. To make the salsa, chop the remaining cherry tomatoes into irregular quarters and mix with chopped capers and finely sliced spring onion. Serve with seeded flat breads.
